1 large onion-thinly sliced

1 large tomato, thinly sliced

4 teaspoons white wine

Spray 13x9 inch pan with liquid shortening. Arrange fish in pan and sprinkle with parsley, lemon juice and salt. Heat oil in small skillet: fry onion and garlic till limp. Pour over fish. Place tomato on fish and pour wine over fish. Bake 350 degrees 30-45 minutes. Serves 2-3.

Grilled Trout

6 small trout

Salt or seasoning for fish

Prepare trout: rub with oil and sprinkle with salt or seasoning. Place in fish basket if available or place on preheated grill rack and cook for about 15 minutes, turning as needed. Option: Rinse trout under cold water and stuff with lemon wedges and onions. Wrap in foil and cook on hot charcoal or gas grill for 6 minutes on each side. Do not overcook. Open foil and, with back of fish facing you, remove skin. There is a line
down the middle dividing the back meat and the belly meat. With fork,
Pull the back meat toward you and belly meat away from you and remove bone.
Squeeze on fresh lemon. Salt and pepper as needed.

6 Rainbow Trout fillets

1/2 cup butter

4 tbsp. green onion, chopped

2 tbsp. parsley, chopped

3 cloves garlic, minced

1 tbsp. lemon juice

8 oz. can of sliced mushrooms, drained

14 oz can artichoke hearts, sliced, and drained

1 tsp. salt

1/2 tsp. cayenne pepper

Pat rainbow trout fillets with a paper towel and place in flat baking dish. Melt butter in sauce pan and sauté the green onions, parsley and garlic until tender. Add lemon juice, mushrooms, artichoke hearts, salt and pepper. Cook for a few minutes until heated thoroughly. Pour sauce over the filets and bake in 325 degree F oven for about 18 minutes or until fish flakes with a fork. Serves 4.

8oz package of pre-made stuffing, (such as Stove Top)

Directions:

Preheat Oven to 350°F

Beat eggs, water, and approximately two tablespoons of soy sauce together in a separate bowl and set aside.

Get a large bowl and mix the ground beef and stuffing together. Make sure to use your hands and combine the mixture well, as this is the most important step.

Slowly work the egg mixture into the meat and stuffing, once again making sure to combine all ingredients well.

Pick up big ball of meat and pack in hands until you have formed a loaf.

Place in ungreased loaf pan and place on center rack in oven for 45-55 minutes uncovered until center of meatloaf is browned. Drain excess grease off side of pan and let stand 5-10 minutes before cutting and serving.

Ingredients:

1 onion, chopped

1-2 celery stalks, chopped

1 cup cracker crumbs

1 clove garlic, diced

1/4 teaspoon allspice

sprinkle of curry powder

1 teaspoon Worcestershire sauce

2 eggs

2 lbs. ground beef

1-2 cans of mushroom soup

Makes 1 bread pan of meat loaf

Directions:

Mix meat, eggs, and spices

Mix in vegetables and crackers

Bake at 400°F

Drain off grease when brown 10-20 minutes

Add 1-2 cans of mushroom soup on top

Bake until done

Total baking time 1.5-2 hours

1 1/2 pounds of ground beef

1 cup Ritz crackers

2 beaten eggs

8 ounces Del Monte tomato sauce

1/2 cup fine onion

Pound the Ritz crackers until fine like bread crumbs.

Mince the onion until fine.

Here is the classic Jello pie recipe that makes a lovely presentation for any occasion. You can use practically any flavor of gelatin and fruit to create a rainbow of fruity goodness.

2/3 cup boiling water

Recipe

1 package Jell-O brand gelatin (any flavor)

Jello Pie Recipe: Classic Jello Pie

1/2 cup cold water

1/2 cup ice cubes

2 containers Cool Whip

1 ready made pie crust

Directions

Pour gelatin mix into a large bowl. Bring water to a boil. Pour hot water over gelatin until completely dissolved. In a separate bowl, mix together the cold water and the ice cubes to make one cup. Combine cold water with the gelatin mixture and stir until all the ice melts.

Stir in one container of the whipped topping and beat with a wire whisk until mixture is nice and smooth. Refrigerate the gelatin for 15 to 20 minutes or until gelatin thickens. Spoon the gelatin mixture into the pie crust.

Refrigerate pie for 4 hours or overnight.

Ok... If you are reading this is because you do want to hear the "why breakfast is good for you" sermon.

Well, you may have read it in the paper, or maybe you've heard it on the radio on your way to work. It's almost a cliche! Almost everybody knows that "breakfast is the most important meal of the day".

If it's so good... how come many people skip breakfast?

Why Breakfast is Good for You

People do. There are lots of excuses for not having breakfast, including (but not limited to):

Lack of time

not being a morning person

trying to lose weight

Not finding anything good for breakfast, and

having forgotten to have it

A while ago I used to skip breakfast too.

Later on I would have "whatever", and then a very heavy lunch (depending on how hungry I would be by lunch time).

But when I started paying attention to what I ate (and how and how much), I realised the damage I was causing to my body by skipping the most important meal of the day.

What happens to our bodies when we skip breakfast?

Understanding this question will help you realise "why breakfast is good for you", and hopefully, you'll reconsider making breakfast a must in your everyday life.

For starters, if you skip breakfast you're making it harder for your body to lose weight, and your energy levels will tend to be lower than those of a person who looks after herself.

Why?

Think about it. By the time breakfast is due, your body has not received any food for about 8 hours (a third of your day). Compare this with your "day" hours, when you have 3 (if not more) meals.

It is amazing how, if you are used to skipping breakfast, you condition yourself to feel "ok", but a close examination of your "fasting" mood would reveal that your levels of energy are low. What happens is that your body is rested at the end of a good sleep, but you still need the energy after you wake up.

Your body does not stop just because you go to sleep. It goes on breathing, digesting, pumping up blood everywhere in your body, and moving (amongst many other physiological processes).

It constantly needs fuel (ie food), and even if you're not hungry early in the morning, your body will still need the extra energy contained in a breakfast meal. It makes sense, doesn't it?

But breakfast is more than an energy source. Breakfast is good for you because it:

provides glucose to your brain, making you mentally efficient and alert. You get "the edge" by having breakie (Australian for "breakfast"); ;-)
reduces your cholesterol levels (depending on what you eat for breakie, of course!);

gives you vital nutrients and vitamins;

makes you slimmer, by jump-starting your metabolism (how quickly your body burns energy), which is slow after relative inactivity at night.
makes you "Mr or Ms Happy". An energized and balanced meal may alter your mode and make you feel better during the day.

What to have for breakfast?

The opposite of skipping breakfast is having the wrong things for breakfast (and possibly too much of it too!).

Every meal is capable of giving you energy. The question is "how long will that energy last for?". This is important to know because that will determine whether you still feel "charged up" till lunch time, or whether you're starving by 10 AM.

Avoid things like chocolate chip muffins and other high sugar meals. The energy levels are high (and they taste deliciuos, I know!) but short-lived, and the residual makes you bigger and heavier. So, these foods are a no-no.

Fresh fruits and cereals, are a healthier choice, but you have to be mindful of the sugar contained in cereals. Some of them can have enough sugar a whole family in one single serving!

But what if you're not "a breakfast person?"

There is no such a thing as a "breakfast person".

If you need to do something for your health, you do it, and you can condition yourself to make having breakfast part of your life and take pleasure on it.

But I've got a couple of tips that can help you in your transition to having breakfast:

Know "why" breakfast is important. Reading this article was a good start; ;-)

Buy fruits and cereal (but mind the amount of sugar that some cereals contain);

plan your meals. Planning ahead to have interesting and tasty meals for breakfast will help you enjoy it;

If you don't have the time to prepare breakie (you don't have 5 minutes for yourself!?), you may choose a good low fat fast food outlet and be good and have a low-fat-low-sugar-meal.

But whatever you do... do have breakfast!

Best Fresh Salsa Recipe

Here is the best salsa recipe I have ever made.

My family does not even like regular jar or store bought salsa anymore. I use to make salsa and cook the ingredients on the stove but once was in a hurry and just used everything straight from the garden, after a little washing. The result was a flavor burst in my mouth with all the wonderful flavors that were not toned down by cooking them away.

Best Fresh Salsa Recipe

8 tomatoes

3 green peppers

4 jalapeno peppers (you can remove some or add some depending on your taste)

1 small onion

Garlic cloves or minced garlic

salt

Olive Oil

Parsley

Lemon or lime juice

Cut off the tops of the green peppers and remove seeds. Cut off the tops of the jalapenos but do not remove seeds. Cut the outer skin off the onion and cut in four sections.

Place these items in a food processor and run until everything is small. I usually do not leave big chunks of the jalapeno as small chopped bits blend better and give flavor throughout the salsa.

Drop in 1 teaspoon on minced garlic. You can use the stuff out of the jar from the store or put in 2 whole cloves.

Wash the tomatoes and cut off the tops and cut them in half our fourths and put them in the food processor on top of the already chopped up peppers and onions.

Process these until the tomatoes are well chopped. Open the food process and remove the container and put a strainer in your sink and pour the mixture from the processor into the strainer and let strain all the excess liquid from the tomatoes. I usually use my well washed hand in their to stir up the salsa and speed up the process but you can use a big spoon. When Most of the excess liquid is gone dump the strainer mixture into a bowl or container.

Add 1 teaspoon salt, 1 tablespoon dried parsley, 3 to 4 tablespoons lemon or lime juice. I prefer lime juice but once ran out and used lemon juice and it worked just as well. I use the bottled juice but it you have fresh it would be even better. Add 2 tablespoons of extra virgin olive oil.

Stir everything together with a spoon and quickly get out your chips and get some because as soon as your family knows you have homemade salsa made it will not be around for very long.

6. Beat on a low speed, until just combined

8. Bake for 25 minutes until firm to touch

9. Allow to cool for a few minutes and then transfer to a wire rack

Yields: 12 cupcakes

Ingredients:

  • *5 oz. Butter - softened
  • *5 oz. superfine sugar
  • *6 oz. self-raising flour
  • *3 eggs
  • *1 tsp. vanilla extract

Instructions:

1. Preheat the oven to 350F

2. Line a 12-cupcake pan, with cup cake papers

3. Crack the eggs into a cup and beat lightly with a fork

4. Place all the ingredients in a large bowl

5. Beat with an electric mixer for 2 minutes, until light and creamy

6. Divide the mixture in the muffin pan

7. Bake for 18-20 minutes until risen and firm to touch

8. Allow to cool for a few minutes and then transfer to a wire rack

9. Allow to cool fully before applying the frosting

  • 6/8 cups plus 4 tablespoons of milk
  • 4 cups of cake flour
  • 1 cup plus 4 tablespoons of sugar
  • 4 teaspoons of baking powder
  • 1 pinch of salt

Direction:

In a small heatproof dish, mix chopped chocolates with heavy cream. Put over boiling water on a low heat. Whip until almost thawed out. Remove from high temperature and boiling water. Beat until soft. Then cool by stirring the batter occasionally until room temperature.

In a medium sized bowl, beat the egg yolks and milk until well-mixed. Set aside. Sift the sugar, cake flour, salt and baking powder into a medium-sized bowl. When the chocolate mixture is at room temperature, add now the dry ingredients together with the egg yolk and milk mixture. Fold until blended, should a few lumps appear just ignore.

Preheat the waffle maker. While the waffle maker heats, you may start cleaning a small bowl with a clean beater, beat the egg whites on high speed to stiffen the peaks. Gently fold into the batter until there the white streaks disappears. Then follow the manufacturer's instructions for cooking waffles because waffle makers vary from the amount of batter you are going to put on the divisions.

  5. Take spatula and slide the edge of it under and round side of pancake. Flip over and cook for about 2 minutes more. Put pancake on the plate and in the warm place. For example in oven.
  6. Repeat with remaining batter.
  7. Serve pancakes filled with fresh berries and chocolate-hazelnut spread.
Tip:
You can store your pancakes. Stack pancakes alternating each with two layers of waxed paper and place entire stack in a good freezer bag. You can store them for up to 4 months. When you want to use frozen pancakes, thaw them at room temperature for about an hour. Before using them, make sure they come up to room temperature. Heat a skillet and brush it with a little butter then heat the pancake gently on both sides.

2 cups of powdered sugar

½ cup butter melted

1 ½ T Milk

Yield: 8-12 muffins

This basic easy healthy muffin recipe can be varied in lots of ways. You can leave them plain, add in a cup or so of your favorite fruit and adjust the amount of sugar to suit your tastes. If you prefer larger muffins, distribute the batter among 8 of the muffin cups and pour 1/4 cup water into the empty cups to prevent them from buckling.

These muffins call for a minimal amount of fat - just 3 tablespoons for the entire batch. You can replace all the fat with a fruit puree such as applesauce, if you prefer, but that makes them too rubbery for my tastes.

Ingredients

1 cup all-purpose flour

1 cup whole grain pastry flour

1/4 cup sugar, or to taste

3 teaspoons baking powder

1/2 teaspoon salt

1 large egg

3 tablespoons vegetable oil or melted butter

1 cup milk, plus more if needed

optional additions below

Recipe Instructions

Position an oven rack in the middle of the oven and heat oven to 375 degrees F. Grease a standard 12-cup (2-1/2-inch) muffin pan or line the cups with paper liners.

In a large bowl, whisk tougher the flour, sugar, baking powder and salt.

In another bowl, whisk together the egg, vegetable oil, milk and any optional ingredients (such as 1 cup of fresh or frozen blueberries).

Add the egg mixture to the flour mixture and stir until just combined and moistened. (The batter should still be lumpy and thick, but moist. If the batter seems too dry add a little more milk.)

Distribute the batter evenly among the muffin cups.

Bake until the tops are golden brown and a toothpick inserted in the center of a muffin comes out clean, about 20 minutes (30 minutes for larger muffins).

Remove from the oven and let the muffins rest in the pan for 5 minutes before transferring them out of the pan and onto a wire rack to cool completely. Or enjoy warm.
