Steel cut oats are very healthy since they are the least processed of the oat family. Foods that undergo less processing are more natural and healthy. Steel cut oats also have a robust nutty flavour and are very tasty!
To make steel cut oats start off with 3 cups of water, add a generous pinch of salt and bring it to the boil. Stir one cup of steel cut oats into the boiling water. You can adjust the amount of oats to suit your taste. Bring the mixture back to boiling, then turn it down to a medium heat and simmer it uncovered for up to 30 minutes. Check on it and stir often, if it rises or spills over the pot turn the heat down a little. If a skin forms just stir it back into the mixture. After 20 minutes, taste the oats. If you prefer the taste and texture at this point you may want to stop cooking. Be sure to keep stirring frequently to prevent any burning in the bottom of the pot. If you find the oats are too thick near the end of cooking, you can add a little more water or perhaps a little milk to make it creamier. When it is cooked to taste, remove it from the heat and set aside to cool off but only for a minute since it will become very thick and unappetizing if it stands too long.

When you are ready to eat the oatmeal, top it with fruit, such as blueberries, raspberries or your favourite dried fruit. A topping of nuts adds a nice crunch. To sweeten you may want to use honey, maple syrup or brown sugar then add a little cinnamon to finish it off.
Any leftover oatmeal can be kept refrigerated for up to a week. It will become firm and gelatinized but when you heat it again it will soften. Try heating it for one minute on high, then stir in your favourite toppings and heat again for a minute or so to suit your taste. You can also stir in a small amount of milk at this point to give it a creamy taste.
Try cooking a big batch of steel cut oats to keep in the fridge for a super healthy morning breakfast. Cooking steel cut oats is really quite simple. Just remember to keep some interesting toppings on hand to change it up and break the boredom of the same old breakfast.
